Pastry course · Fede Cocina

Following a recipe isn't knowing how to bake.

Ever done everything right and it still didn't turn out? In this course you won't just learn recipes: you'll learn to figure out why one didn't work and how to fix it.

Sound familiar?

You did everything it said and it didn't turn out.

It happens to almost everyone. A recipe tells you what to do, but not what to look for, or what to do when something doesn't come out like the photo. So when it fails, you don't know if it was the oven, the butter or the mixing.

This course teaches you to understand what's happening at every step. And when something goes wrong, to find the cause and fix it.

How it works

A few minutes a day, in four steps.

1

Understand

An explanation, screen by screen, with clips of me cooking.

2

Practice

Short questions that explain right away why it's right or why it isn't.

3

Bake

The recipe step by step, and before you turn on the oven, you practice it.

4

Fix

If something didn't work, the diagnosis tells you why and how to fix it.

01 · The path

A path that uncovers one lesson at a time.

The lessons wait on the counter, covered. Finish one and the next is uncovered: you move forward in order, from the most basic to the most complex, without getting lost.

  • 18 chapters and over 410 lessons
  • Every chapter ends with a “What went wrong?” challenge

02 · The explanations

First you understand. Then you do.

Every lesson starts with an explanation: what the ingredient is, what it's for, what it looks like when it's right. Screen by screen, with clips of me cooking, and you move on when you're done looking.

  • 24 hours of explanations across the course
  • Clips of me doing every step
  • At your own pace: go back or review whenever you want

03 · The questions

Questions that make you think.

After each explanation, short questions. If you get one wrong, it explains why right away. And as you move forward, review practices open up, with random questions from everything you've already done.

  • Over 2,200 questions
  • The explanation for every answer, instantly
  • “What went wrong?” cases to train your eye

04 · The pantry

Your pantry fills up as you learn to use each ingredient.

You start with flour, eggs, sugar and butter. Each chapter adds new ingredients, each with its own card and lessons: what it does in the recipe, how to use it and what happens if you swap it for another.

  • 62 ingredients to unlock
  • What each one does, explained simply
  • What happens if you swap it for another

05 · The recipe book

193 recipes, step by step.

The recipes from my videos, in an order where each one uses what you've already learned. Tap a step and see how it's done, with a clip of me doing it, how to tell it's right and the classic mistake.

  • Every step with a clip of me doing it
  • “It's right when…” so you know you're on track
  • “Watch out” for the most common mistake in that step

06 · Practice

Practice the recipes in your virtual kitchen.

Learn to bake while you travel, from bed or wherever you are, without having to be in the kitchen. You pick the ingredients from the cupboard, decide what goes in first and check the consistency: is it ready, or do you keep beating? At the end it tells you how it would have turned out and what would have happened if you made a mistake.

  • Wherever you are, without turning on the oven
  • You pick ingredients, order and consistency
  • Results for proportions, technique and baking

07 · The diagnosis

And if it didn't work, you'll know why.

Every recipe tells you all the reasons something might have gone wrong, and how to fix it.

You pick what happened, described the way you see it: “it sank,” “it's raw inside,” “it cracked.” It shows you every possible cause, what to do next time and, when possible, how to save what you already made. So you always know what happened and what to do.

Pound Cake · What happened

“It split on top like a volcano and burned”

Why it happens

  • 1The oven was too hot
  • 2Your oven runs hotter than the dial says

How to fix it

Bake at 180 °C (356 °F), on the middle rack.

If it's browning too fast, cover it with aluminum foil and keep baking.

This is how it looks in the course: open the recipe, tap “Diagnose problems” and pick what happened.

08 · Ask Fede

Still not working? Write to me.

From the course, you tell me what happened and, if you want, add photos of how it turned out. I read them and reply myself with how to fix it. The answer arrives right there, in “Ask Fede.”

Who's teaching you

Hi, I'm Fede.

I graduated as a software engineer and, a year later, started studying to become a culinary professional. In Fede Cocina I bring together what I love most: cooking, photography and programming.

I started this wonderful project in 2019 and, since then, I've filmed myself making more than 200 recipes.

Now I've put together this course so you don't have to rely on luck: so you understand what each ingredient does, what to look for at each step and what to do when something doesn't work.
